Here, we mix mashed leftover sweet potato with cilantro, scallions, and pickled jalapeños (though you can sub whatever other quesadilla fillings strike your fancy); spread it over half of a flour tortilla; fold it; and cook it in plenty of oil, just as we recommend in our basic quesadilla guide.

This is one of my favourite quick snacks, that is if you bake the acorn squash ahead of time. I like to include one or two baked acorn squash in my weekly food prep so they’re ready for snacks and meals during the week. My favourite fillings are peanut butter, yogurt and granola but you can also fill them with savoury ingredients like hummus, guacamole, quinoa, black beans, any mixture of those or anything else you can think of.
Easy peasy. Mix a little plant-based protein powder with water or almond milk to create a thick pudding then top it with your favourite fruit and a sprinkling of nuts or seeds. I love cherries or strawberries and almonds, sliced banana and walnuts or chopped apple and hemp seeds. To make a peanut butter protein pudding, add 2 tbsp of powdered peanut butter to vanilla protein and mix with water to make a thick, mousse-like pudding.

I’ll just accept the weird double agar thing if it can bring us vegan gummies and vegan cheese! Is this cheese recipe still in the testing/tweaking phase or to be shared soon? I am very intrigued now…plus I have a lot of agar agar on hand lol 😀 “Sugar-tastic” that is the perfect word for the packaged kind–no better than candy really. My first two flavor ideas here were orange and apple because I just love both of those juices, but the apple ones were not an attractive color. Low Carb Bars — There are a plethora of “keto-friendly” on-the-go bars that have hit the store, online and on the shelves. Before you fall for their marketing scheme, investigate the ingredients and calculate the net carbs per bar. Make sure the bar will fit within your calorie and net carb limits for the day. The two most common bars that can be eaten on keto, albeit sparingly, are Quest Bars and NuGo Smarte Carb Bars. Only use bars like these as a last resort if you have no other keto snacks available.
Making homemade potato chips is surprisingly easy—just slice the potatoes thin, boil them in vinegar-spiked water, and fry until crispy. The vinegar keeps the chips from getting too dark as they fry. i thought you would also want to know that there is a virus attached to your blog–when i go to your blog from google search, a blinking alert shows up in the place where your blog address was and tells me that there are viruses on my computer and then tells me to clean it– i thought it was valid because it was from microsoft essentials–my spyware–but then it downloaded something–i just took it off my computer–thank goodness! also, some of your recipes won’t print–it tells me there is insufficient memory to print (error in page script)–on some of them but on others it prints fine. just wanted to let you know! thanks for the great ideas!!!
