One important note is be sure you use agar agar powder not flakes. I have tried it with the flakes before and it did not set up the same way. I have also tried making powder from the flakes in a coffee grinder–another fail. This is the agar agar powder I used because it was organic and relatively reasonably priced. Also the packaging was pretty, and I would be lying if I said that didn’t factor in.
For a sweet fix, try mixing mandarin oranges canned in their own juice with a couple tablespoons of light whipped topping. High-Fat Cheeses — Although hard cheeses make for a great keto snack, they aren’t the best cheese for increasing your fat intake while minimizing protein. The highest fat cheeses that can serve as great high-fat, low-protein snacks are mascarpone cheese and cream cheese. I’m pretty sure this post will make vegan marathon training more doable for me! I’m doing pretty good, but I get sooooo hungry between meals the day or two after a long run. This should help hold me over. Perfect timing too, because in the next few weeks I’ll be up to the longest runs. I just tried the endurance crackers and the protein bars and despite the fact that my crackers came out WAY thicker than yours did, they’re still great snacks! This is SO helpful, because each time I’ve tried going vegan, it’s BETWEEN meals I’ve been stumped. OK, I made a healthy vegan breakfast. OK, I have a delicious vegan dinner planned. But …. now what?! And it’s funny, because it’s not like I snack on hard-boiled eggs or cheese, I just — I guess I couldn’t think of ANYTHING healthy to eat, not just something vegan! :-) (Except for plain straight veggies. And I just have way too much of a sweet tooth to feel called to snack on them by themselves.)
My cousin the fitness trainer is a vegan and he orders my vegan baked goods all the time. I really like the recipe options you offered because I think many of the store-bought snacks are unhealthy. I prefer to make my own vegan crackers, chocolates, cookies, etc. I even make them sugar-free! A dense loaf, but not in a bad way. Whole grain spelt flour tends to make dense breads, but I just love the nutty flavour of spelt so I don’t mind. The walnuts, streusel, and raisins add just the right amount of sweetness and crunch and the zucchini gives moisture without needing any oil. You also can’t taste the zucchini at all, but you can see the pretty green flecks!
Popcorn is quite simple. Just buy a packet of popcorn kernels, fry them in oil in a covered pan, and add salt, or anything you like. You can really create your own flavor here, like cinnamon, plain salt, salt and pepper, spicy, and so on. Just make sure that the frying pan is covered. That is very important, otherwise, the popcorn kernels are going to be popping all over your stove top, cabinets, the floors, you get the idea. It is going to look like an explosion in Molly Weasley’s kitchen (Yes, I read all the Harry Potter books 😉 )
