Quesadillas without cheese may seem like a contradiction in terms, but they are indeed a thing in Mexico—and, more to the point, they can be delicious. Here, we mix mashed leftover sweet potato with cilantro, scallions, and pickled jalapeños (though you can sub whatever other quesadilla fillings strike your fancy); spread it over half of a flour tortilla; fold it; and cook it in plenty of oil, just as we recommend in our basic quesadilla guide.
This colorful creation makes for a festive appetizer or a delicious bite-sized snack. That same vegan nacho cheese sauce makes for a serious plate of nachos. We use freshly fried tortilla wedges (they're sturdier than store-bought chips) as the base for vegan refried beans and chili, Roasted-Tomato Salsa, guacamole, and tons of fresh and pickled veggies. Layering the chips and toppings for even coverage is a little extra work, but it's worth it for the many more balanced bites you'll get.
Quick breads and yeast breads both are fair game when it comes to snacking; a warm, fresh loaf of bread sitting on the counter doesn't need an accompaniment–it's good on its own! But, of course, if you want to serve your bread with something special, serve it with a homemade spread like this Vegan Chocolate Hazelnut "Nutella" Spread that the kids will go wild for.
One important note is be sure you use agar agar powder not flakes. I have tried it with the flakes before and it did not set up the same way. I have also tried making powder from the flakes in a coffee grinder–another fail. This is the agar agar powder I used because it was organic and relatively reasonably priced. Also the packaging was pretty, and I would be lying if I said that didn’t factor in.

I added protein powder to rev up the protein in these bars, making sure they would give me lasting energy when out and about. I wasn’t really sure what they would taste like with 1/2 cup of protein powder, but I was pleasantly surprised by the outcome! Just make sure you use a pleasant tasting protein powder and you’ll be fine. I used an unsweetened rice protein powder (Garden of Life) which worked great as it doesn’t have a strong flavour.
What about evening snacking? The biggest problem with nighttime snacks is most of us reach for ice cream and chips-not fruit and yogurt. That's not to say you can't have a treat after dinner. Some of your favorite evening snacks may even be on this list (chocolate! popcorn!). One thing to note, if you're always hungry after dinner, make sure your meal is made up of filling and healthy foods and you're getting enough food. If you love an evening snack after dinner, serve yourself a healthy portion onto a plate or bowl so you're not scooping straight from the container.
Toasted bread is a blank canvas for creativity. At dinner, you can stretch the bounds of typical “breakfast” toasts, too. Smoked salmon is a rich and luscious fish, and a little goes a long way: a pound will easily feed a family of four. Creamy yogurt, tangy capers, and crisp red onions balance the fattiness of the fish, but you can let people pick and choose the toppings they want with their smoked salmon toast. No one would say no to a bit of smashed avocado on this easy breakfast for dinner dish.
This is more of a dessert than a snack but I still eat it for a snack quite often, especially during the summer. To make it add frozen strawberries, a small piece of frozen banana and 1/2 a scoop of vanilla vegan protein powder to a high-powered blender. Add just enough plant-based milk to allow it to blend, just a few tablespoons is perfect, and blend until smooth.
